Fall is a time of abundance with comfort food and festive gatherings.  Authentic Provençal Olive Tapenade is a delicious spread of olives, garlic, capers, and anchovy, that is served in the South of France.  It is an easy and beloved dish that is simple to make, yet always welcome at a gathering.

Prep. Time:  20 minutes
Ingredients to serve 6

  • 2 cups black Niçoise Olives (or Kalamata)
  • 6 cloves of garlic
  • 1 tbsp of Pastis (or Gin if you don’t have Pastis)
  • 2 filets of anchovies (it is the perfect hint of saltiness that this dish needs)
  • 2 tbsps. capers
  • ½ tbsp dried Herbes de Provence
  • ½ cup olive oil – or a dash more to taste
  • 1 French Baguette (day old is good for this recipe)

Directions:
Combine garlic cloves, capers, and anchovies in the food processor with the Pastis (or Gin). Give it several pulses to make a paste.

Next, add ⅓ of the olives and approximately ⅓ of the olive oil and ⅓ of the herbs. Pulse several times. Mix together with your spoon, bringing the contents on the side of the bowl into the center.

Repeat 3 times at intervals to make as smooth or textured as you prefer.

Slice the baguette into 1/4 “ slices.  Arrange single layer on a baking sheet and toast until golden brown – turning once. They will be crisp.

To Serve:  Spoon the mixture into a serving bowl and serve surrounded with the baguette slices. Voila!
